Time for another dinner favorite! This time, pesto chicken sandwiches. I picked up this pesto from Trader Joe’s a couple months ago and used it as pasta sauce, which was really good, but it’s thick so not the best. I wanted to find a better use for it so we came up with these sandwiches! They are easily customizable for whatever toppings you like and super quick and easy to put together.
Chicken breast, thawed
Trader Joe’s pesto and quinoa spread (I’ve only used this but any store bought or homemade pesto will work!)
Toppings; again, customize this part however you want, we use:
- mozzarella cheese
- ranch and bbq sauce
Place your thawed chicken breast in a casserole dish or the crockpot, season. ( I use salt, pepper, & garlic powder). Coat the chicken with the pesto spread. Bake in the oven at 375* for 20 minutes, flip, and cook another 20 or until cooked through. You can also put this in the crockpot! Low for 5 hours, or high for 2-3 depending on the thickness of your chicken. When the chicken is cooked all the way through, take it out and shred. Slice your bread, add desired toppings, and enjoy! So yummy!
